【红烧排骨】
主料:排骨500克
辅料:葱白1根、姜2片、蒜4瓣、香叶2片、桂皮1块、大料1朵
调料:食用油1勺、冰糖35克、酱油1勺、黄酒4-5勺、盐1小勺、冷水和开水适量

1.排骨凉水下锅,不盖锅盖煮开。
用凉水是为了将排骨中的血水尽量煮出来, 不盖锅盖是为了让异味充分挥发。

2.开锅后会慢慢煮出血沫子,将血沫尽量撇干净后,将排骨捞出备用。

3.冰糖敲碎。

4.锅里放一点点油,放入冰糖,用小火炒糖色,火一定要小。
