放入不钢(或陶瓷)容器, 用薄膜覆盖好, 进冰箱腌制24小时. 在南京的家里他们腌鸭子用的是一只民国时期的带盖子的彩陶罐, 盖子的钮是一只颇精细的蜘珠, 没有带出来, 且用这只不锈钢盆啊:

腌好的鸭子放入一只大锅,水要能没过鸭子,如果锅太浅,煮的过程中需要翻身. 用筷子检查熟的程度, 不可过熟烂, 断生后能吃动即可:

先从胸口当中一刀,一切为二, 不要将脊椎骨切开, 而是完全给其中一半:

这带脊椎的一半称为"硬边", 不带脊椎的为"软边"的. 可以想象过去人家买半只鸭, 多半希望要软边:
