牛里脊 250克
红辣椒 1个
青辣椒 1个
花椒 1小勺
干红辣椒 少许
香葱叶 少许
鸡精 少许
盐巴 少许
料酒 少许
胡椒粉 少许
酱油 少许
嫩肉粉或小苏打 少许
橄榄油 2汤勺

做法:
1.牛里脊切丝(横切牛羊,竖切猪肉),然后做上浆的动作:加入少许嫩肉粉或者小苏打,生抽,鸡精、黄酒和盐巴然后抓匀,加入少许的水同时继续之前的动作,目的是利用盐分将水分让肉吃进去。当肉质开始粘手的时候加入少许淀粉,这里根据之前加入的水分多少选择加入干玉米淀粉还是水玉米粉。最后加入少许植物油封住,腌制40分钟即可。(上浆用玉米粉,勾芡是生粉,这点亲们要注意。)
