笋子和鸡肉,荤素搭配,香辣开胃,好吃又不腻,鸡肉很入味,微辣中带点麻,笋子脆中带点韧劲,很好吃哒,下饭绝对是超一流哈!!

原料:三黄鸡、笋干。

辅料:啤酒1听、洋葱1个、蒜1头、姜1块、葱白七八根、小米辣8根、八角2个、香叶3片、花椒适量。

做法:
1、笋干用清水泡发3小时左右;(如果白天没时间,又是晚饭吃,可以在头一天晚上泡好,按照步骤2处理后,用保鲜袋装好放冰箱冷藏保存)

2、笋干完全泡发至舒展,变软后,冲洗干净,撕成小条,再切段,备用不必撕得太细,要不然吃的时候找着费劲;

3、鸡肉用清水泡5分钟,倒掉血水,冲洗干净后沥去水分;加2勺料酒,1勺老抽,1勺蚝油,适量盐和胡椒粉,腌制1小时以上时间长一点更好;

4、洋葱切丝,姜蒜切片,备用;

5、锅中倒适量油,油热后下入姜片,蒜片,炒香;

6、倒入腌制好的鸡肉,翻炒5分钟左右,至鸡肉表面变色;

7、下入洋葱丝,小米辣椒,香叶,八角,花椒,继续炒2-3分钟,炒香后下入笋丝,加适量盐,翻炒均匀;

8、加入啤酒和适量开水,完全没过所有食材,煮开后转小火炖煮40分钟左右;

9、40分钟后,转大火收汁,一边收汁儿要一边翻炒,一是使汁儿均匀附在肉上,二是避免糊锅;

10、汁儿不要完全收干,可以适量留一点,味道会更好。觉得颜色不够或者味道偏淡的话,可以加少许老抽调节。起锅前,加入1勺蚝油翻炒均匀,撒上葱花,即可。
